Ingredients
2 chicken breasts (or thighs), diced or whole
1/2 head green cabbage, chopped
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups chicken broth
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
1/2 teaspoon paprika
Fresh parsley for garnish
Instructions
1. Chop cabbage into thin strips. Dice onions, carrots, and celery.
Mince garlic.
2. Heat olive oil in a pot over medium heat. Sauté onions, carrots, and celery for 5 minutes.
Add garlic and cook for another minute.
3. Add chicken to the pot. Pour in chicken broth and add bay leaf, thyme, salt, and pepper.
Bring to a boil, then simmer.
4. Stir in cabbage and let cook for 20 minutes until soft.
5. If using whole chicken, remove, shred with a fork, and return to the pot. Adjust seasoning as needed.
6. Serve hot, garnished with parsley. Enjoy with crusty bread or salad.
Notes
- Store in the fridge for up to 4 days or freeze for 3 months.
- Try adding chili flakes for a spicy kick.
- Substitute chicken with beans for a vegetarian option.
